In a pot add Mariam’s Miracle Sauce and 1/4 cup water; simmer the sauce on medium heat; add salt and oil as desired. Add the cut potatoes, stir lightly, and cook until tender.

Baked Eggplant with Yogurt Sauce
In a bowl, combine Mariam’s Miracle Sauce and the eggplant. Mix well, adding salt and oil to taste.
Place the eggplant onto an oven tray, cover completely with aluminum foil and bake for 20-30 minutes.
Check eggplant for softness after about 15 minutes. Add more water if necessary; allow water to evaporate while eggplant cooks.
While eggplant is baking, prepare the yogurt sauce. Mix yogurt, garlic and a pinch of salt to taste in a bowl. Spread some of the yogurt sauce on a serving platter, then arrange baked eggplant slices on top. Finish by spreading the remaining yogurt sauce on top of the baked eggplant slices and sprinkle dry mint on top.
Vegetable Beef Soup
Add 1/8 cup oil to pot; bring to medium heat, lightly browning meat. Add water, salt and Mariam’s Miracle Sauce and bring to boil. Cook meat to desired tenderness, then add your choice of vegetables. Bring back to boil until vegetables are tender. Garnish with chopped cilantro. You may eliminate the beef, or substitute lamb or chicken.
